Claussen’s process begins long before the first crunch—at the farms where its cucumbers are grown. Because freshness is the key to Claussen’s never-pasteurised pickles, procurement follows a precise, seasonally shifting pattern.

To guarantee peak quality, Claussen sources cucumbers from different regions throughout the year.

The growing season starts in Mexico during the winter, where warm conditions allow for an early harvest. As temperatures rise in the US, sourcing shifts northward, ensuring that cucumbers are always picked at their freshest.

This approach allows Claussen to work with a network of trusted farmers who understand the brand’s strict requirements.

Cucumbers must be the right size, shape and texture to meet production standards. Any deviation can slow down processing, affect the brining process or lead to inconsistent crunch—a non-negotiable factor for the brand.

Once harvested, cucumbers need to be transported and processed as quickly as possible.

Claussen operates on a 10-day freshness window, meaning every cucumber must be brined within days of leaving the farm. Any delays or inefficiencies could compromise the final product.

AI and logistics keep cucumbers moving

Sourcing is only half the battle—getting cucumbers from the farm to the factory in optimal condition requires an advanced logistics network. To manage this process efficiently, Kraft Heinz has turned to AI-driven solutions.

AI-powered inspections play a crucial role in sorting cucumbers before they even reach the production line.

By scanning for size, shape and texture, these systems ensure that only the best cucumbers are selected for pickling. This level of precision reduces waste and speeds up processing.

Beyond sorting, AI also helps maintain quality control throughout the transportation process. Because Claussen pickles are never heated or pasteurised, they must remain refrigerated at all times.

AI-driven analytics track shipments, ensuring temperature control is maintained from the moment cucumbers leave the farm to the point they enter the brine tanks.

As Helen explains, AI has enabled "an increase in precision, scale and productivity." By integrating automation into the supply chain, Claussen has strengthened its ability to maintain consistency while meeting growing demand.

The farmers and workers behind the process

While AI and logistics are essential, sourcing Claussen cucumbers is still a job that relies on people—farmers, drivers and plant workers who ensure the process runs smoothly.

Claussen’s long-standing relationships with growers mean that farmers are well-versed in the brand’s high standards. They understand that cucumbers must be harvested at the right moment—not too early, not too late—to ensure the best texture for pickling.

The commitment to quality extends to the Claussen factory in Woodstock, Illinois, where generations of workers have contributed to the brand’s legacy. Around 40% of the workforce has a family member who has worked at the plant, reinforcing a tradition of craftsmanship and expertise.

The role of workers goes beyond standard production tasks. For example, brine testing is a key part of the process, especially for the Hot & Spicy range. "Trust us, it’s really spicy!" the company notes, highlighting the hands-on quality control involved in every batch.

This combination of skilled farming, advanced technology and dedicated workers ensures that Claussen continues to deliver its signature crunch—one carefully sourced cucumber at a time.
